Preheat oven to 350 degrees F. Spray SprayLite Oriental Cooking Spray in a 2 1/2 quart casserole dish.
Combine all ingredients, except 1/2 cup cheese, and put in a casserole dish. Bake for about 20 minutes (add 10 minutes if the chicken came out of the refrigerator), add the remaining cheese and bake for another 5 minutes.
Serve by itself or with tortilla chips.
